Turkish Baked Chicken with Vegetables

- Easy Baked Chicken and Vegetables in a Turkish Style -

Serves: 6, Prep time: 20 mins, Cook time: 45 minutes - 1 hour


1 lb chicken drumsticks and/or thighs

1 medium tomato, quartered

1 green or red bell pepper, roughly chopped

2-3 medium potatoes peeled

1-2 garlic cloves crushed

1 large onion

1/2 cup chopped parsley

1/3 cup extra virgin olive oil

1/2 cup green olives (optional)

1 tablespoon sumac

1 tablespoon dried oregano

Salt and pepper to taste


1. Preheat the oven to 375F. 

2. Season chicken pieces with salt and pepper and place onto large tray or baking sheet.

3. Add remaining ingredients to the tray, pouring the spices and olive oil over top. Mix well with hands to thoroughly coat everything with spice and olive oil mixture.  

4. Bake for 45 minutes to 1 hour, until chicken is cooked through.

5. Enjoy!
