Ingredients:
3-5 lb Pork Butt
2 tablespoons Ras El Hanout
1 cup chopped parsley and cilantro
1 tablespoon salt
1 tablespoon black pepper
1 tablespoon chopped garlic
1/2 cup Zah'r Extra Virgin Olive Oil
1/2 cup brown sugar
1/2 cup water
Instructions:
1. Use a food processor to blend all ingredients (except pork) and create a marinade.
2. Add marinade to the pork and massage into the meat.
3. Place in roasting pan and add 1/2 cup water. Cover all with aluminum foil.
4. Roast for approx. 2 hours at 350 degrees. Exact cooking time depends on size of roast.
Serve with Moroccan Couscous Salad.
