Authentic Hummus


2 cups canned chickpeas, drained and rinsed

1/2 cup tahini (sesame paste)

2 cloves peeled garlic

1/4 cup extra virgin olive oil, plus extra for drizzling

1 teaspoon of Sumac, plus extra for sprinkling

Fresh lemon juice to taste (optional)

Salt and pepper to taste


1. Combine everything in a food processor and blend into a smooth puree. 

2. Taste and adjust seasoning, adding lemon juice if desired. 

3. Serve, drizzled with the olive oil and sprinkled with sumac. Great for dipping warm pita bread slices, pita chips or chopped raw vegetables.
